Confit of Yukon Potato with Garlic Mayonnaise
Serves 12 or more
Takes 55 minutes


2 kg potatoes, cut into squares
1 L duck fat
5 cloves of garlic, skin on
Mayonnaise, to taste
Light squeeze of lemon juice

1) Place potatoes into a roasting pan with the duck fat and garlic and cook in a preheated oven at 150ÂșC for about 40 minutes.

2) When cooked, remove potatoes from fat and place on kitchen paper towels to drain excess oil. Set aside.

3) To make the garlic mayonnaise, remove the skins of the roasted garlic cloves and mash the flesh before mixing it with the mayonnaise. Season the mayonnaise with lemon juice.

4) Before serving, lightly fry the potatoes till golden brown.
