Makes 2

1 bunch rosemary, leaves finely chopped
1 bunch thyme, leaves finely chopped
2 garlic cloves, finely chopped
1/2 cup (125ml) extra virgin olive oil, plus extra to serve Ioptionall
2 x 26 cm good-quality, ready-made pizza bases
2 desiree potatoes, skin on, very thinly sliced la mandoline is ideal]
200g Taleggio* or other soft washed-rind cheese, torn

Preheat the oven to 22D°C. Line 2 large baking trays with baking papen Place the rosemary, thyme, garlic and extra virgin olive oil in a bowl, season and stir to combine. Place pizza bases on the baking trays and brush with the herb oil. Arrange the potato slices in a single layer on top, brush with more herb oil and scatter over pieces of Taleggio. Season with a little sea salt. Bake the pizzas for 15-2U minutes until the potato is golden and tender and the bases are crisp and golden. Drizzle pizzas with extra virgin olive oil, if desired, cut into slices and serve. * Taleggio is an Italian washed—rind cheese available from delis.
