Scallops Wrapped in Bacon with Homemade Garlic & Mayo Dip
Serves 6
30 minutes preparation time
12 frozen jumbo scallops
12 rashers of streaky bacon
2 large egg yolks
1/2 tsp sea salt
1/2 tsp white wine vinegar
200 ml light olive oil or vegetable oil
1 clove garlic, finely minced
1 tsp Dijon mustard
Steps
1) Defrost and drain the scallops thoroughly, patting them dry with kitchen towel.
2) Wrap each scallop fully with a rasher of bacon around the edge and secure with a wooden skewer or toothpick.
3) Place egg yolks, salt, and vinegar in a bowl and slowly whisk. Once smooth, drizzle in the oil a little at a time, whisking in between to achieve a thick emulsion. When mayonnaise is suitably stiff, add garlic and mustard then mix gently. Leave to chill in the refrigerator.
4) In a non-stick frying pan over high heat, sear the bacon-wrapped scallops for 3 minutes on one side and 2 minutes on the other. Do not overcook or the scallops will become tough. When using smaller scallops, reduce cooking time by 30 seconds or more.
5) Serve skewers immediately with dip on the side.
