Peanut and date cookies
Makes: about 40
Preparation time: 30 minutes, plus,refrigeration time,Baking time: 12-15 minutes,Oven temperature: 180°C
• 80mI (60g) sultanas
• 80ml (60g) seedless dates, roughly chopped
• 140mI (60g) peanuts, roughly chopped
• 3SmI {125gl butter
• 100ml (90g) castor sugar
• 1 large egg
• 230ml (125g) self-raising flour
• 250ml cornflakes, lightly crushed
1 Mix the orange rind, fruitand nuts together in a bowl.
2 Beat the butter and sugar together in a separate bowl until creamy. Add the egg and beat well. Fold in the flour and then stir in the fruit and nut mixture. Place in the fridge for 30 minutes.
3 Roll the mixture into small balls and then roll in the crushed cornfla kes. Place onto greased baking trays and bake for 12 to 15 minutes or until golden.
