Malai  Mushroom

• 1 Liter Milk
•2 tbsp. Govind Bhog rice
• 4 tbsp. Sugar
• 2 nos Cardamom
• 2 nos Clove
• 75 Gms Himalya button mushroom
• 1 tbs Ghee
• 8 nos Cashew nuts
• 8 nos Raisins
• 2 tbsp. Mtmnaka
• 3 nos Caramelized Mushroom (for decoration)
• a pinch of Saffron dissolved in 2 tbsp. milk

1. Cut the washed mushroom in halves

2. Take 1 tbs ghee on a non-stick pan, add the mushroom and cook it on a slow flame till it is soft.

3. Then addallthedryfruits andfryit for another 2 minutes.

4. Boil milk with cloves, cardamom and rice in a heavy bottomed pan while stirring it continuously till it is reduced to 1/2 of its quantity.

5. Add the cooked mushrooms with dry fruits. Add sugar and simmer till the mushroom is cooked while stirring continuously add saffron. Mix it well.

6. Serve hot or chilled garnished with caramelized mushroom.
