Creamy Chipotle Hummus
Ingredients
2 cups canned chickpeas, drained, liquid reserved
11⁄2 tsp kosher salt
1⁄3 cup tahini (sesame paste)
6 T freshly squeezed lemon juice (2 lemons)
2 T water or liquid from the chickpeas
1 chipotle chile pepper in adobo sauce, chopped, plus
1 T adobo sauce
100% whole wheat pita, warmed
Raw veggies (such as carrots, celery, etc) cut into sticks
Directions
1. Place fi rst seven ingredients in a food processor and process until the hummus is coarsely puréed. Taste, for
seasoning, and serve chilled or at room temperature
2. Drizzle with extra virgin olive oil just before serving, if desired. Serve with warmed pita and raw veggies for dipping.
