Dairy-free sago pudding
Serves: 4
Preparation time: 20 minutes,Baking time: 40 minutes,Oven temperature: 160"C

• 1 litre vanilla-flavoured soy milk
• 250ml sago
• 1,5mI ground nutmeg
• 1 cinnamon stick
• 250ml sugar
• 75ml dairy-free margarine
• 4 large eggs, separated
• 75ml smooth apricot jam

1 Heat the milk until it is almost boiling. Add the sago, 2mI salt and the spices. Reduce the heat and simmer overa low heat for 10 minutes or until the sago has become transparent. Stir often.

2 Add 125ml ofthe sugarand the margarine and stir well.

3 Remove from the heat and leave the mixture to cool slightly. Stir in the egg yolks until well combined Pourthe mixture into a lightly greased baking dish. Spoon apricotjam overthe mixture.

4 Whisk the egg whites until they are stiff Beat the remaining 125ml sugar into the egg whites one spoonful at a time. Spread the meringue over the sago mixture and bake in a preheated oven for40 minutes or until it has set and the meringue is light brown in colour.
