Baked cheesecake with strawberries
Makes: 1 x 22cm cake
Preparation time: 30 minutes, plus cooling time
Baking time: 50 minutes
Oven temperature: 170°C
• 110mI (100g) butter, melted
Filling
• 500g cream cheese
• 295ml (250g) sugar
• 3 large eggs, separated
• 80mI cornflour
• 125ml milk
• 5ml vanilla essence
• juice and grated zest of 1/2 lemon
• 250g strawberries, halved or sliced
1. Crush the biscuits in a food processor until hne. Transfer the mixture to a bowl and mix in the melted butter. Stir well, then press into the base of a 22cm ovenproof dish or tin.
2. Filling Beat the cream cheese, 250ml (210g) sugarand the egg yolks together. Stir the cornflour into the milk and then beat into the cream cheese mixture. Stir in the vanilla essence and the lemon juice and zest.
3 Beat the egg whites and remaining sugar together and fold into the cream cheese mixture. Spoon over the base and bake on the bottom shelf ofa preheated oven for 50 minutes. Switch the oven off and leave the cheesecake inthe oven until it is cold. Chill the cheesecake for at least a day before you serve it.
4 Just before serving, top with the fresh strawberries.
