Apple cake
Makes: 1 x 25cm cake
Preparation time: 35 minutes
Baking time: 1 hour
Oven temperature: 180°C

• 50ml nut liqueur (orapplejuice)
• one 400g can apples, drained andchopped
• 410ml (375g) butter
• 420ml (375g) castor sugar
• 6 large eggs
• 15ml grated orange zest
• 685ml (375g) cake flour
• 7,SmI baking powder
• 7,5 ml ground mixed spice
• 30ml icing sugar, to decorate

1 Pourtheligueur, for example Frangelico, or the appleiuice over the apples and leave to stand for half an hour.

2 Grease and line a 25cm round cake tin. Beat the butter and sugar until light. Beat in the eggs, one at a time, followed by the orange zest. Fold in flour, baking powder and spice, along with the apples.

3 Spoon the mixture into the prepared cake tin and bake in a preheated oven for one hour, or until a skewercomes out clean.

4 Once completely cooled, remove from the tin and cut into eight slices. Sift icing sugar overthe top.
