NICDISE SALAD WITH SESAME-CTRUSTED TUNA

2 tbs sesame seeds
2 x 1BDg tuna steaks
1 tbs olive oil
1 tbs good-quality pesto
2 tbs lemon juice
200g baby green beans, trimmed, blanched
125g cherry tomatoes, halved
1/4 cup [409] black olives
2 soft-boiled eggs, halved
Place haltthe All-Bran Fibre Toppers in a mortar and pestle with the sesame seeds and 1 tsp salt flakes. Roughly crush, then coat the tuna in the mixture. Enclose in plastic wrap and place in the freezer for 15 minutes.Heat oil in a frypan over medium high heat. Add the tuna and cook for 2 minutes on each side for mediumrare. Set aside to rest for 5 minutes. In a small bowl, combine pesto with lemon juice and set aside.
Toss the beans, tomatoes and olives together and divide among 2 shallow bowls. Scatter over the remaining 25g
All-Bran Fibre Toppers, arrange the eggs over the top, drizzle over the pesto and season. Place the tuna on top of
the salad and serve.
